Stewed Rhubarb

500g fresh rhubarb
1/4 cup sugar
1/4 cup water

Boil water and sugar on a medium heat untill sugar has dissolved.
Add rhubarb to the pan and return to the boil.
Simmer for 10 – 15min or untill rhubarb is at required texture.
Test for sweetness and add more sugar if required.

Oriental leaf veg storage

Crop oriental veg
cut and wash leaves (remove slugs)
plunge into a pan of boiling water for 2mins
strain and plunge into ice cold water
strain and freeze in plastic bags.

defrost as needed and use in stirfry and noodle dishes.
